Theo Coles happened across Gareth Renowden in 2012, the owner of the Limestone Hills vineyards in Waipara Gorge, north of Christchurch on New Zealand's South Island. Theo made a Pinot Noir from Gareth's close planted, naturally farmed vineyard, sitting on active Limestone. The wine got better and better and it was bottled in 2014.
The 'Hermit Ram' sums up the ethos of working with tiny sites and ancient techniques applied to New Zealand flavours.

Farming and Winemaking
The range of wines today has expanded, but in general the fruit comes from tiny vineyards throughout the Canterbury region.
Vines are naturally farmed and wines made with the minimal amount of additions. Old techniques are employed.
This Pinot Noir comes from a close planted vineyard to on the Omihi slopes. Soils are predominately clay with bands of limestone.
75% Whole Bunch, fermented with indigenous yeasts, natural malolactic fermentation and no sulphur added until bottling. Unfined and unfiltered. 20 ppm S02 total.
