This wine is made in a version of the ancestral method making it a Pet Nat. Martin describes the wine added to the fermented Huxelrebe as coming from their “Prosecco vineyard.” Serving suggestion: being undisgorged this wine can be quite aggressive when opened. For best results make sure the wine is well-chilled and open over a glass.
