La Bancale - Arrosoir

Taken from two different plots – one in Saint Paul de Fenouillet, the other in Maury. Both planted on calcareous black schist with alluvial deposits. The plot is planted next to a small river and it is Bastien and Céline’s most productive plot at 45hl/ha.
Harvest was done on the 17th and 23rd August. Whole bunches are pressed directly in pneumatic press then fermentation and ageing in stainless steel only.
