People have been badgering us about brewing a TIPA for the last year, so we finally caved. We thoroughly tested our way through the style to see what all the fuss was about and set our sights on maximum juice.
Starting with our DIPA recipe as a jumping off point we adjusted the malt bill, increased the hop load and turned up the booze. Mosaic & Citra give this beer a big juicy, fruity aroma and classic New England flavour, while a sparing addition of Sabro adds a melon softness, without veering into coconut (as Sabro sometimes does).
