Vinification: the five varieties
are co-vinified. The grapes are
destemmed and transferred to
steel tanks where fermentation
kicks off naturally. Maceration
is 10-15days, after which the
wine is pressed. Half is returned
to steel tanks whilst the
other half goes into old 600L
barrels. The wine is racked
off its gross lees and aged on
fine lees in steel for 6 months.
Bottled unfined and unfiltered.
