Pelicas comes from a single plot, north-east facing, on decomposed granite soil, 1 km from the sea. The 50 year old vines are ungrafted and pergola trained. Whole bunches are foot pressed and the majority of stems removed by hand. The wine is then macerated on skins for 3 weeks during the fermentation. Left in amphora for just under a year. No temperature control. No sulphites or filtration.
