Vinification: The wine is made
as per the ancestral method.
The two varieties are vinified
together - direct pressed,
fermented in steel and bottled
when the wine reached around
13 grams of residual sugar.
It finished fermentation in
bottle hence giving the wine
its natural bubbles. Disgorged
in December 2021. Unfined,
unfiltered, zero sulphite
additions.
